You’re going to love this easy and delicious breakfast in a jar. You can enjoy it right away or let the flavours steep and the nuts get deliciously chewy overnight in the fridge.
Traditional bircher muesli is made with oats that are soaked overnight in a combination of milk and or apple juice to soften and become porridge-like. To create a Paleo version, we’ve run with the basic formula but swapped out the oats and milk for an array of tasty and equally hearty, nuts and seeds imbued in homemade yogurt and freshly squeezed orange juice. The combination of sweet and sour antioxidant dried berries, cinnamon and cardamon infuse the bircher with aromatic warmth that is the perfect morning comfort food any time of the year.

MAKES 2 - multiply the ingredients for extra servings
INGREDIENTS
½ cup of homemade coconut yogurt plus extra to serve 1 teaspoon flax seeds (omit for SCD) 1 teaspoon sesame seeds 2 tablespoon pepitas 1 tablespoon sunflower seeds ½ cup flaked almond ½ cup pecans – chopped ¼ cup shredded coconut 1 tablespoon of dried organic anti-oxidant berry mix ½ cup freshly squeezed orange juice 1 tablespoon grated orange zest ½ teaspoon of ground cinnamon ¼ teaspoon of ground cardamon 1 teaspoon of raw honey or maple syrup (or more to taste)
METHOD
Combine all the bircher ingredients in a bowl and stir thoroughly to incorporate.
Divide the mixture between the 2 jars, glasses or bowls.
Place in the fridge for 1 hour or overnight.
Top with more homemade yogurt and fresh or dried berries.
