An insanely healthy & refreshing summertime drink. 

When the temperatures rise there’s nothing quite like a fresh fruit slushy to help rehydrate your body and quench your thirst. This watermelon and lime combo is perfectly sweet, is made with only real ingredients and is free from artificial colourings, flavours and sugar. It's a summer drink the whole family will luv. 

Made with frozen watermelon, a twist of fresh lime and a dash of maple to balance the flavours – this slushy is as simple as you can get, and because watermelon is made up of virtually just water, you don’t even need to blend ice to achieve the perfect icy texture. On the day the sweetness of your slushy will depend on your watermelon. Add maple syrup to taste but don’t be afraid to be generous with lime juice – the combo is a summer days perfect match. For additional fun flavour variations, you can experiment with replacing water with fizzy water, coconut water, kefir water or kombucha. Also, fresh mint can be blended or just used as a garnish.

WATCH HOW TO MAKE FRUIT SLUSHY HERE 


INGREDIENTS

Watermelon – cut into pieces and frozen. Prepare enough for approx. 2 blender jugs
Juice of 1 lime or more to taste
2-4 tablespoons of maple syrup
¼ - ½ cup of water
Optional - Fresh mint leaves to blend or garnish

*watermelon slushy must be made in two batches. Use the above quantities as a guide. We used half of a lime and 2 tablespoons of maple syrup per blender jug.

METHOD 

1.   Cube the watermelon, lay the pieces in a dish or tray and place in the freezer. The high-water content in watermelon will cause the pieces to freeze together into a solid mass.
2.   Remove the watermelon from the freezer and let defrost for 10 minutes so the chunks can be separated into pieces.

3.   Add the frozen watermelon to the blender jug - fill just over half way
4.   Add half the lime juice, 2 tablespoons of maple syrup and a quarter cup of water.
5.   Insert the tamper tool into the blender jug lid and secure it on the jug.
6.   Choose ‘smoothie’ mode and blend, tamping down the chunks of frozen melon. If the melon is too dry, add another quarter cup of water or more for a looser slushy.

7.   Continue to blend until the watermelon has pureed into a smooth icy slush.
8.   Taste test. Add more lime or maple to suit.
9.   Scoop the slushy into glasses and serve.
10.  Optionally add another squeeze of lime on top or fresh mint leaves
